Arugula, Apple and Goat Cheese Flatbread

Ingredients

·1 (8-inch) gluten free flatbread or pizza crust
·1/2 apple, thinly sliced
·1/4 cup crumbled goat cheese
·Handful arugula
·Halves pecans, for topping

Directions

Preheat oven to 400°F. Place flatbread on the middle of a baking tray. Lightly brush with olive oil and top with arugula, apple slices, goat cheese, and pecans. Bake for 10 minutes, or until crust has goldened. Top with more arugula, then slice, serve, and enjoy!

We enjoyed superb extremely fresh salads and vegetables last year in our weekly box. The box contained a good and varied selection and it is so good to know that it was picked that morning.
